Raw mango is sour in taste becoz it contains acid but when it become fully matured (ripe)it tastes sweet. Why is that ? Where does the acid go ??
Ripe mangoes are sweet due to presence of a sugar called fructose, when a fruit is raw its acid content is high and fructose is nearly absent. When a fruit ripens the acid content decreases and fructose content increases, hence becomes sweet.
